Buckwheat pizza recipe

Who doesn’t love pizza? The weekend is just around the corner and we must start planning a meal to make at home that is fun to make with our friends and family!

But, pizza is not always the best option if you are trying to lose weight, get fitter or are just being mindful on what you eat. That is why I want to share with you a recipe that is high in protein, low in carbs, gluten free and very satisfying!

On my search for healthier options, I have been using buckwheat for many recipes including porridge, bread, and pizza. This seed (it’s not a grain!) is high in protein, fibre and is packed with antioxidants. If you want to read more on buckwheat, this is a good source.

Last Sunday (Oscar night!), I made two types of pizza, vegan and non-vegan. It’s nice to have a home that holds all options! The base is the same for both, you just need to get creative with the the toppings.

Buckwheat pizza recipe

Ingredients: 1 ¾ Buckwheat, ¼ cup of chia seeds, 1 cup of water, ¼ cup of olive oil, 1 ½ teaspoons of baking powder, ½ teaspoon sea salt

  1. Soak the buckwheat at least two hours. For more nutritional benefits I usually soak it for about two days so the seed sprouts (It must be washed twice daily).
  2. Preheat the oven to 160°C.
  3. Soak chia seeds in ½ cup of water. Leave it at least 30 minutes so it becomes kind of gelatinous.
  4. Put everything in a food processor so the chia seeds and the buckwheat grind.
  5. Add ½ cup of water, olive oil, baking powder and sea salt. Grind a bit more to mix everything.
  6. Take a large tray, put on some parchment paper and spread the batter evenly.
  7. Bake for 1 hour 15 minutes. When you take it out you must let it cool down completely.
  8. Top it with whatever you want: Cheese, ham, veggies, tomato sauce or tofunese sauce. Then, put in the oven for 20 minutes so the toppings heat up and the crust gets a little crispier.

This amount of batter will give you two small pizzas. To make more, just double the ingredients.
